Sharing Our Bunco Night Menu - Recipes

Thanks so much Linda*Parkers Paradise and Deb-Paxton Valley Folkart for letting me know that we probably all had the same giveaways posted so that I could check out your blogs and get mine listed again.  Sure hope I remembered them all, lol.

Had a great night at Bunco last night.  I had the most 'wins' and won $60.  Bunco was held at my daughter Carey's house and she served Fried and Rotisserie chicken, potato and stuffing casserole,  Chinese coleslaw and cucumbers & tomato salad with sweet & sour dressing.  Everything was delicious.  For dessert she had an ice cream cake to celebrate my eldest daughter Deana's 37th birthday and a Butterfinger dessert.


Butterfinger Dessert 
Chinese Coleslaw

Potato & Stuffing Casserole 
 2# bag Ore Ida hash browns
16 oz. container sour cream
1 can (10-3/4 ounces) condensed cream of chicken soup
1 cup milk
2 cups cheddar cheese  ( for cheesier potatoes, use 4 cups)

Thaw out hash browns and mix with sour cream, soup, milk and cheese.  Spoon potato mixture into 12x9 baking dish.

2 boxes stuffing mix
2 sticks margerine

Prepare stuffing according to directions, but use the 2 sticks of margerine instead of what directions call for.  Might look a bit 'soupy' but that's ok.  Spoon stuffing over potatoes and bake at 350 degrees for one hour.  Cover with foil for the first 30 min. and then uncover so stuffing top will be slightly crusty.

Cucumber & Tomato Salad
2 cucumbers, peeled and sliced
1 med. onion, sliced
2 tomatoes, chopped

Put above ingredients into large bowl and mix with dressing ( below)

Sweet & Sour Dressing
1 cup. Miracle Whip salad dressing
2 tsp. sugar
1 Tablespoon apple cider vinegar
black pepper to taste


You can adjust this dressing to suit your family's taste - my hubby likes a little more vinegar added.  If yours is too sweet - add a bit more vinegar.  If it's too sour, add a bit more sugar or Miracle whip.


Today I plan on doing some crafts.  I pulled out some Autumn and Christmas patterns that I've been wanting to make so here's hoping I get some projects completed today.

    I am going to try this potatoes and stuffing recipe. I am nuts for carbs! LOL Seriously, we use cornflakes on our hash brown casserole and I think I would love the stuffing instead. Stuffing and cranberry sauce are my 2 favorites at Thanksgiving!

  3. Hi! That menu sounds so yummy! Thanks for the receipes. I also play bunco with a group of ladies once a month. When my month comes up I might use some of your receipes. Glad you won! That's great - I normally don't win, in fact, I can't remember winning at all. LOL

And now I just have to ask, what in the heck is Bunco??!! Never heard of it or played it before but if I can win $60.00 a night I might take it up!! Congrats on your win! Deb
